Alfredo Sauce

Summary: Simple Alfredo Sauce


  • 1 cup Heavy cream
  • 2 tablespoons Unsalted Butter
  • Herbs: basil, parsley, chervil, whatever is on hand
  • Cheese: parmesan, romano, pecorino, whatever is on hand
  • Salt, nutmeg, white pepper to taste


  1. In sauce pan add cream and butter and bring to boil.  Stir so butter incorporates. Cream will puff up so do not let it boil over.
  2. Simmer until reduced by half. Season to taste.
  3. Before serving add cheese and stir until melted. Toss in pasta until pasta is coated. Plate and top with freshly chopped herbs.

Fresh Pasta

Recipe: Fresh Pasta

Summary: Recipe for basic pasta dough


  • 1 cup semolina flour
  • 1 cup bread flour
  • 2 eggs
  • water (by feel)


  1. Whisk together flours and pour onto clean wood cutting board.
  2. Make well in center of flour mound and pour in lightly whisked eggs.
  3. Slowly incorporate eggs with fork. When that doesn’t work anymore, add a little water 1 teaspoon at a time and incorporate by hand. You want your dough to stay together but be pretty dry so add water a little at a time. When you have the right consistency, knead for at least 10 minutes (use heel of your hand, push down, fold over, push down again). Your dough should be smooth as a baby’s bottom when you’re through.
  4. Shape into disc, cover with plastic wrap and refrigerate for 20 minutes at least. Working quickly, roll dough out with rolling pin until it’s a quarter of an inch thick and can fit in your rolling machine on the widest setting.   Roll through machine, gradually narrowing yourrolling machine setting until desired thickness is reached.
  5. Work quickly and always keep unused dough covered to prevent from drying out. Make desired shapes and boil for about 3 minutes in salted water or until done.
